PRIPREMA</span><br />

Postupak pravljenja sira<br />
<br />
1. U lonac se ulije mlijeko, doda sol i siriste, promijesa i grijemo na temperaturi oko 37'C (''toplina ruke"). Kad se ugrijalo, ostavimo da se ukruti, zgusne. Proces traje nekoliko sati. Najsigurniji uspjeh postizemo kad ovu radnju obavimo uvecer i nastavimo ujutro.<br />
2. Kad je mlijeko zgusnuto, sjecemo ga nozem, na kocke i ugrijemo na otprilike 80 C (ne dozvolimo da provri). Sad vidimo da se stvara sirutka i sir tone u njoj. Skinemo sa vatre i ostavimo da se ohladi.<br />
3. U cijediljku stavimo gazu i na nju supljacom stavljamo sir da se ocijedi. Zatim ga onako zamotanog u gazi stavljamo pod uteg da se ocijedi i otvrdne. Ako nemate opremu, stavimo ga izmedju dvije daske za sjeckanje i na gornju dasku stavimo neki uteg, kamen i sl. <br />

Drugi nacin tlacenja sira je da se upotrijebi prazna limenka od konzerve, bez poklopca i dna. Napravimo disk od drveta koji slobodno ulazi u limenku. Stavimo u gazu zamotan sir u limenku, na to drveni disk i na njega uteg. (Dalmosice znaju kako se sole srdele).<br />
4. Vec sljedeci dan mozemo da probamo jesmo li uspjeli.<br />

1. Od ostatka sira napravimo osnovnu masu od navedenih sastojaka, provjerimo okus i dodajemo ostale sastojke po zelji. Ja sam napravio tri varijante:<br />

-luk i paprika<br />

Pocetnici mogu zapoceti sa jednom litrom mlijeka i moguca "katastrofa" se moze upotrijebiti za razne torte od sira, palacinke ili za slane pite i slicno.<br />

Oprati kruske, oguliti ih i raspoloviti po duljini. Odstraniti sjemenke i izdubiti udubinu za nadjev.<br />2. Ovako pripremljene kuhati u vodi u koju ste dodali secer po volji i nekoliko snita limuna. Umjesto secera moze se staviti med.<br />3. Dok se kruske kuhaju (ne prekuhati), samljeti kekse i pomijesati sa marmeledom.<br />4. Kuhane kruske staviti u vatrostalnu zdjelicu, u njihovo udubljenje staviti zlicu nadjeva od keksa i marmelade.<br />5. Izbatiti bjelance sa secerom da se dobije cvrsti snijeg i s njim premazati kruske. Ubaciti u pec na 180`C i peci desetak minuta ili dok se snijeg ne zapece.<br />6. Dodati snite smokava i lagano prokuhati vrlo kratko da se ne raspadnu. Skiniti s vatre da se hladi.<br />3. Dok se smokve hlade, pjenasto izmijesati margarin sa secerom.<br />4. U drugoj posudi izmijesati sve suhe sastojke.<br />5. Margarinu dodavati jedno po jedno jaje naizmjenice s mjesavinom brasna. Rukaama utrti maslac u brasno.<br />2. Istuci jaja sa secerom, dotati vaniliju, pomijesati s brasnom.<br />3. Gotovim tijestom obloziti kalup za pitu i staviti u hladnjak dok pripremamo nadjev.<br /><br />NADJEV<br /><br />1. Oprane sljive raspoloviti i izvaditi kostice.<br />2. Izrezati na tanke snite .<br />3. U tavi rastopiti maslac, dodati sljive i prziti nekoliko minuta. Dotati smedji secer, promijesati,uliti konjak i zapaliti. Kad plamen nestane, jos malo promijesati.<br />4. Usuti flambirane sljive na tijesto.<br />5. Izmijesati secer i cimet, dodati jaja i vrhnje, izmijesati i preliti preko sljiva. Peci na temp 200`C oko pola sata.<br /><br />Ovo vrijeme pecenja vrijedi ako u nadjev stavimo same sljive. Ja sam pekao malo duze, jer sam upotrebio i saft od flambiranja, pa je nadjev bio rjedji.
